    Servings: 8

    Preparation Time: 15 minutes

    Cooking Time: 20 minutes

    Ingredients

  • 16 large cremini (baby bella) mushrooms, cleaned with stems removed
  • 1 tablespoon olive oil
  • 4 cups fresh spinach, chopped
  • 2 cloves garlic, minced
  • ½ cup crumbled feta cheese
  • ½ cup reduced-fat Parmesan cheese, grated
  • 2 tablespoons plain non-fat Greek yogurt
  • ⅛ teaspoon salt
  • ¼ teaspoon ground black pepper

    Method of Preparation

Wash your hands before you start.

Steps to Make It

      1. Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.

      2. Heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

      3. Add the chopped spinach and cook for 2–3 minutes, stirring occasionally, until wilted and any excess moisture has evaporated. Remove from the heat and allow to cool slightly.

      4. In a mixing bowl, combine the cooked spinach mixture with the crumbled feta cheese, grated Parmesan cheese, Greek yogurt, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

      5. 5. Spoon the filling generously into each mushroom cap, gently pressing the mixture into place.

      6. Arrange the stuffed mushrooms on the prepared baking tray. If desired, lightly coat the tops with cooking spray to encourage even browning.

      7. Bake for 15–20 minutes, or until the mushrooms are tender and the filling is heated through with a lightly golden surface.

      8. Serve warm as a nutritious appetizer, side dish, or healthy snack.

      9. Allow to cool for a few minutes before gently removing from the ramekins or muffin tin.

      10. Serve warm and enjoy.
