Avocado and Orange Sandwich


Original recipe makes 4 sandwiches
8 (1 ounce) slices whole-wheat bread
1 large navel orange, peeled and cut into 1/4-inch thick slices
2 large avocados - peeled, pitted, and sliced
2 tbs chopped spring onion
1 teaspoon vinegar
1 tsp olive oil


Arrange four of the bread slices on a flat surface; top each slice with two slices of orange, even amounts of avocado slices, and even amounts of spring onion. Sprinkle each sandwich with 1/2 teaspoon of oil and vinegar mixture. Top each with remaining bread slices and serve.
