8. Recipe of the month - Broccoli Salad

Broccoli SaladIngredients

  • 1 head broccoli
  • 2 tbsps olive oil
  • 2 tbsps mild vinegar
  • 2 tbsps lemon juice
  • 4 cloves garlic
  • 1 tsp mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili flakes

Method
Cut the broccoli into small pieces, fairly the same size, so they cook at the same rate. Put the broccoli in a pot with boiling water and let it cook for about 10 to 15 minutes. Then put the broccoli in drainer and allow it to cool and dry. For the dressing, putĀ  minced garlic in a small bowl. To it add vinegar, lemon juice, and mustard. Add salt and pepper, andĀ  chili flakes as much as you want. Using a whisk, whisk in a couple tablespoons of olive oil. Place the broccoli in a bowl and pour the dressing over it. Toss the broccoli with dressing and make sure each piece is coated.
