     Sweet Potato and Spinach Curry

     A warm, comforting, and diabetes-friendly curry packed with fiber, antioxidants, and plant-based nutrients. Combining naturally sweet potatoes with iron-rich spinach and aromatic spices, this wholesome dish supports balanced nutrition while delivering vibrant flavor. Rich in complex carbohydrates and fiber, it helps promote satiety, supports glycemic control, and contributes to overall metabolic health.

    Ingredients

  • • 300 ml hot low-salt vegetable stock (vegan-friendly)
  • • 750 g sweet potatoes, cut into bite-size chunks
  • • 1 onion, finely chopped
  • • 250 g baby spinach
  • • 2 garlic cloves, thinly sliced
  • • 1 red chilli, deseeded and thinly sliced (plus extra for garnish)
  • • 1 tbsp medium or hot curry powder
  • • 400 g passata

    Method of Preparation

    Wash your hands before you start.

Steps to Make It

      1. Pour the vegetable stock into a large saucepan and add the sweet potatoes and onion.

      2. Bring to a boil, then reduce the heat, cover, and simmer gently for 4–5 minutes.

      3. Add the spinach, garlic, red chilli, curry powder, and passata.

      4. Stir well and cook over medium heat for about 10 minutes, or until the sweet potatoes are tender.

      5. Stir in tomato paste, lemon zest, salt, pepper, and cumin.

      5. Garnish with extra chilli slices if desired and serve warm.
